My recipe for Microwave Omelette in a Mug, is a fabulously healthy and high protein light meal or breakfast dish.

This microwave mug omelette is prepared and cooked in under 10 minutes, and is perfect for new mum’s and babies from 6 months onward.

Microwave Omelette in a Mug

My 7 month old granddaughter loves omelettes, as well as scrambled eggs. And, this is a fabulous recipe for weaning babies onto solids.

As well as being a great recipe for babies, it’s also a wonderful recipe for mums too. Quick and easy with full control over which ingredients you add.

I would suggest omitting the spring onions and red peppers for early weaning, unless you dice them very finely.

After cooking the omelette in the mug, allow it to rest for up to 2 minutes, then either eat it from the mug, or decant it onto a plate for baby.

My granddaughter loves to eat omelettes with her fingers, as in a strip. This is easily done with this recipe once it’s been turned out.

Once you are ready to start baby on meat, if you are not following a vegetarian diet, add very finely diced ham to the egg mixture before cooking.

Back to mum, and the rest of the family – this recipe for Microwave Omelette in a Mug makes a wonderfully quick meal for midweek, as an after school light supper.

Serve with salad or steamed veggies, or even with a baked potato or chips for a more substantial meal.

Furthermore, teenagers can easily make this when at home by themselves – just be careful to tell them to allow it to rest for a couple of minutes before eating.

I also think this would be the ideal (and high protein) recipe for university or college students living away from home.

Enjoy this recipe, whoever you are serving it to, and please do let me know how you served it, Karen

Ingredients

  • 10g butter
  • 1/2 shallot, peeled and finely diced
  • 4 large eggs, beaten
  • 2 tablespoons finely chopped red pepper
  • 2 spring onions, trimmed and finely diced
  • 50g grated mature cheddar cheese
  • Chopped parsley
  • Salt and pepper, to taste

Instructions

    1. Divide the butter and diced shallot between 2 microwaveable mugs and heat on high for 30 seconds until the butter has melted. Brush the melted butter around the full length of the mug.
    2. Beat the eggs in a jug with the red pepper, spring onion, cheese and parsley.
    3. Pour the egg mixture into the 2 mugs and microwave for 2 minutes, stopping every 30 seconds to gently bring the uncooked egg up to the top of the mugs with a spoon and mix lightly.
    4. Cook for a final 15 to 20 seconds until the eggs are cooked, and are light and fluffy.
    5. Remove the mugs from the microwave and allow to sit for 1 to 2 minutes.
    6. Gently run a knife around the edge of the omelettes and invert them onto a plate, or eat them straight from the mugs.
